Mandatory Station Takeaways
- Optimal cooking oil temperature is strictly 178°C (±2°C).
- Discard oil immediately if TPM test strip exceeds 24%.
- Never add water or ice near open hot oil vats.
### Standard Operating Procedure: Fryer Oil Setup
1. **Morning Inspection**: Check that fryer vats are clean and heating elements are properly submerged before turning on gas/electric lines.
2. **Oil Quality Check**:
- Use our calibrated **Total Polar Materials (TPM) test strip**.
- If TPM is **below 20%**: Oil is in optimal cooking condition.
- If TPM is **between 20% - 24%**: Plan an oil filtration run between lunch and dinner peaks.
- If TPM is **above 24%**: Immediate oil discard and boil-out required. Never fry in degraded oil.
3. **Temperature Target**:
- Set fryer digital controls to exactly **178°C (352°F)**.
- Never exceed 185°C to avoid scorching oil and acrolein smoke fumes.
4. **Safety Gear**:
- Always wear heavy-duty heat-resistant neoprene gauntlets when handling hot fryer baskets or filtering oil.
