Mandatory Station Takeaways
- Wash hands with warm water and soap for 20 full seconds.
- Gloves are NOT a substitute for handwashing; change gloves between tasks.
- All cuts must be covered with bright blue, waterproof, metal-detectable plasters.
### Staff Personal Hygiene Protocol
1. **20-Second Handwashing Technique**:
- Wet hands under warm running water (38°C - 42°C).
- Apply bactericidal liquid soap.
- Rub palms, interlock fingers, clean backs of hands, thumbs, and fingernails for a full **20 seconds**.
- Rinse thoroughly and dry with single-use disposable paper towels. Turn off tap using paper towel.
2. **When You MUST Wash Hands**:
- Before entering the kitchen line.
- After handling raw poultry, egg, or trash.
- After touching face, hair, phone, or uniform.
- After using the restroom, coughing, or sneezing.
- Between handling regular orders and allergy orders.
3. **First Aid Requirements**:
- Any cut or graze must be covered with a bright **blue, metal-detectable waterproof plaster**.
- Blue is used because food is naturally not blue, making lost plasters instantly visible.
4. **48-Hour Exclusion Rule**:
- Any staff member experiencing vomiting or diarrhoea must not return to work until **48 hours symptom-free**.
